Yemen's Coffee Culture and Heritage:

Yemen has a rich history with coffee, which is believed to have started in the 15th century. Coffee cultivation and trade became essential in the 16th century, and the Yemenis developed a unique roasting and brewing method, which became an important part of their culture and social traditions. The port city of Mocha was a major center for coffee trade, and it is where the term "mocha" comes from. Yemenis also developed a system of coffeehouses called qishr, where people would gather to drink coffee, socialize, and discuss politics and culture.

Yemeni Coffee Today

Yemen's coffee industry declined in the 20th century due to competition from other coffee-producing countries and political instability. However, recently there has been a renewed interest in Yemeni coffee and its unique flavors. Yemeni coffee is now considered a rare and high-quality specialty coffee, with a distinctively spicy and fruity flavor profile.

Beni Al-Areef Village

Beni Al-Areef is a small village in the highlands of Yemen known for its coffee plantations. Coffee cultivation has been a tradition in this region for centuries, with the Beni Al-Areef coffee growers producing some of the world's finest Arabica coffee beans. The coffee grown in Beni Al-Areef is prized for its unique flavor profile, which is a result of the region's fertile volcanic soil, high altitude, and ideal climate conditions.

 

Carbonic Maceration

Carbonic maceration is a process used in coffee production to enhance the flavor of the coffee beans. In this process, whole coffee cherries are placed in a sealed container, which is then filled with carbon dioxide. The lack of oxygen and high carbon dioxide levels inside the container trigger a fermentation process, which causes the cherries to break down and release their flavor compounds.

After processing the coffee for two to five days (depending on the pH level), the beans are dried in the sun for two to three days (depending on the temperature). Following this, the beans are moved to a shaded area and undergo a slow drying process that can last up to 40 days. During this time, the beans are regularly stirred and their humidity levels are monitored and recorded.

The result of carbonic maceration is coffee beans with a unique flavor profile that is different from traditional coffee. Carbonic maceration tends to produce coffee with a fruity and floral taste, and a lighter body.
